The Challenge

Sirimon Cheese's Maturing Room 1 (M1) — where waxed Gouda, Vintage Cheddar, Sibiola, and naked cream cheese mature — consistently failed mold control. Airborne yeast & mold counts peaked at 450 CFU/mL with relative humidity stuck at 96–99%, well outside Kenya Bureau of Standards (KEBS) limits. Cream cheese and Sibiola developed visible mold; Vintage Cheddar acquired moldy off-flavours that triggered sensory rejections at QA.

A controlled April 2025 trial — Aerocide deliberately switched off for 14 days — saw counts rebound to 250 CFU/mL and 20 pieces of Sibiola discarded as Too Numerous To Count. Even a small percentage of shrinkage represented substantial financial loss across Sirimon's premium specialty inventory.

The Solution
